With Thanksgiving around the corner... and Christmas shopping in sight, here's something to make the holidays a little sweeter:
Egg Free Chocolate Chip Pumpkin Cookies
INGREDIENTS
2 cups white sugar
1 cup shortening
1 (15 ounce) can pumpkin puree
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
12 ounces semisweet chocolate chips

DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C).
2. Cream the sugar, shortening, pumpkin and vanilla together. Mix until light and well combined.
3. Mix the flour, baking soda and ground cinnamon. Stir the flour mixture into the creamed mixture. Mix until combined. Stir in the chocolate chips.
4. Drop by teaspoons onto an ungreased baking sheet. Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes or until set. Let cookies cool on a rack.

Hi Kara! Hopefully you get this comment... it's a little late. But I just got another recipe from my friend for pumpkin chocolate chip cookies. All you need is 1 spice cake mix, 1 small can of pumpkin mix, and chocolate chips. that's all! I haven't made it, but it sounds easy and also yummy. So I want to try both recipes... COOL. just thought I would share. ADIOS! :)
Hi Kara!!! So i've been looking for a good pumpkin chocolate chip recipe! I hope you get this comment, i know it's a bit late. So I got another recipe from my friend today. It's 1 box of spice cake mix, 1 small can of pumpkin puree, and chocolate chips. that's all you need! wonderful eh? Maybe you've tried it. But i would like to try both recipes some time.
